Black lentils with kale, sundried tomatoes and lemon dressingI had some curly kale sitting on the back of the fridge and looked around in my cupboards for some interesting way to make it. Black lentils seemed promising. Small like Puys lentils, it promised a nice colour combination.
Ingredients 1/2 cup black lentils 1 1/2 cup of water 3 small kale leaves, centre removed 3 sundried tomatoes 1 small lemon 1 tsp lemon peel 1 garlic 1 1/2 tbsp olive oil 1/2 tsp ground cumin salt & pepper Directions 1. Cook the lentils in water until done (about 20 mins) 2. Meanwhile chop the sundried tomatoes and the kale leaves and set aside 3. mix the lemon, olive oil, cumin, salt & pepper in a small bowl 4. Once the lentils are cooked, mix while still hot with the kale & tomatoes, add dressing and combine well. Eat either warm of cooled. I liked it warm. |
