			<content:encoded><![CDATA[<p>I ran into Thiago, the barista from La Merceria, at Manic Coffee yesterday morning. I hadn&#8217;t seen him in a while and he told me he no longer worked at La Merceria, that he was now learning the roasting side of the business at a place called Te Aro. I confessed I had never heard of the place and he encouraged me to drop by. <a href="http://te-aro.myshopify.com/">Te Aro</a> is a new cafe in Leslieville known for roasting its own beans in a very impressive hot air roasting machine. Since we had a day pass yesterday, Alan and I decided to go check out the place during our afternoon break. My only caveat is that they didn&#8217;t have cortados but the macchiato was pretty good. <p>I love coffee. I&#8217;m not addicted and usually have my first coffee of the day some time in the afternoon and I don&#8217;t usually have more than two a day. Some days I have none and that&#8217;s fine. But I really love the taste of a good coffee and in Barcelona I learned that my favorite way of drinking coffee is what the Spanish call a <em>cortado</em> (<em>tallat</em> in Catalan). It&#8217;s usually served in a small glass and in Spain at least half, if not two-thirds, of the glass is filled with espresso and then topped with steamed milk. I like it better this way because the coffee taste is not drowned out by too much milk as in the lattes and capuccinos commonly available in North America. In France I learned that the closest thing to a cortado is a <em>petit crème</em>. Here in Toronto it&#8217;s always a bit tricky. Technically, the closest thing is a macchiato, which is an espresso topped with some milk froth. So I usually order a macchiato and ask them to add steamed milk rather than just froth. Call it a wet macchiato. We used to have a perfect cortado every saturday at Ozzie&#8217;s but unfortunately he stopped serving them in the little glasses since they broke so easily. Now we have our cortados in half-filled capuccino cups, which is not quite the same.</p>
<p>But lately I&#8217;ve noticed that some of the baristas in Toronto know exactly what a cortado is and I can even order it that way &#8211; simply asking for a cortado and not explaining how to alter a macchiato. So far I&#8217;ve had great cortados at the Dark Horse, La Merceria, and Sam James Coffee Bar. The latest one &#8211; the one on the photo above &#8211; was from Manic Coffee. It certainly brought me back to Barcelona.</p>

			<content:encoded><![CDATA[<p>Sean, the new owner of our favourite bike shop, told us to check out his friend Sam&#8217;s new coffee shop on Harbord street. Heeding his advice and always eager to try a new local place, we cycled over.  Turns out his friend is Sam James, considered one of the best baristas (if not the best) in the city. The cafe is very small &#8211; it&#8217;s truly a coffee bar &#8211; but well worth the visit. He uses coffee beans from the <a href="http://www.toimoicafe.com/">Toi &amp; Moi Café</a>, one of my favourite cafés in Montreal. Alan had a latte, Janine had a capuccino and I ordered my usual espresso  with a bit of steamed milk and he understood immediately that I wanted a cortado.  Sam lived for three months in Barcelona in his pre-coffee days and he credits Spain for teaching him about coffee culture. Each coffee came with flawless latte art and it tasted just right. Sam was extremely nice, down to earth and not at all like some of the snotty baristas out there who seem to see every customer as a coffee ignoramus.  We&#8217;ll definitely be going back for more.Next time I&#8217;ll take some pictures of the actual coffee&#8230; I was too excited about it to remember my camera <img src='http://www.matoandmaplesyrup.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>

<p>On the issue of making espressos at home, Sam says, &#8220;When people talk about buying a home espresso setup I tell them to save their money and just go to a coffee shop. To get a good home set-up it&#8217;s going to be about $5,000 for something that compares to a commercial machine, when you might as well buy a commercial machine and have it at home. For the two or three bucks you might pay every day for a good espresso, it&#8217;ll take you years to pay off that machine. You&#8217;ll be a lot happier if you go to a coffee shop.&#8221; He is absolutely right. Alan and I considered buying an espresso machine at one point. After much research on what makes a good espresso, we&#8217;ve decided it wasn&#8217;t worth it. We would never be able to pull something that was similar to what a well-trained barista can get out of a commercial machine unless we were willing to spend thousands of dollars. So we bought a good quality stove-top espresso for our occasional coffee at home and spend our time exploring the nice independent cafes the city has to offer.  Sam James is one.</p>

I had a capuccino and a lemon-ginger scone and I have to say it was quite nice.</p>

			<content:encoded><![CDATA[<p>We discovered a new place today. <span style="text-decoration: underline;"><a href="http://chabichou.ca/">Chabichou</a></span> is mainly a cheese shop but also serves quiches, sandwiches (grilled cheese with a choice of brie, cheddar or swiss) and tasty tarts. I had noticed it last time we cycled by and today we decided to stop for a light lunch after our market rounds. Loved the atmosphere, the cheese display, the thought of homemade butter, and the smell of fresh-baked croissants in the air. Very nice indded.</p>

When I first started my PhD, one of the first things I was told is that despite its size and central location, good food is hard to come by on campus. That certainly turned out to be true; most of the cafeterias on campus are served by Sodexo and serves fast food of the worse quality. So I ended up having to walk further away or bring my lunch from home. That was until I discovered Thérèse and her wonderful café. The menu is short, the influence is Mediterranean (Thérèse is Lebanese, raised in Egypt), and everything is made in house, with the freshest ingredients. Prices are unbeatable and portions are normal and not the over-sized amounts one encounters in most restaurants. Usually I feel guilty when I eat out for lunch since I always feel that I could have made something better-tasting and more nutritious at home but Sylvester&#8217;s is one of the few places where I can eat guilt-free.</p>

This is what I had last time I was there. Usually I have either the Mezza plate, Yum Yum 1 or 2. This one is a new dish and it&#8217;s Fava beans with lemon garlic tehina &amp; tomato sauce, a very Lebanese dish. It was VERY good and exactly what I needed in a rainy, cold day.</p>

<p>Quinoa salad with Lentils, carrot &amp; beet salad, kale salad, and red rice ball. The place inspired me so much that I bought some millet at Kensington the next day and made this for lunch:</p>
